Executive Chef - Dennis M. Delamater
Dennis is a Wisconsin native and a valley resident for the past twenty years. From 2000 – 2007 he was the Owner and Executive Chef of Citrus Café, named the Best French Restaurant by the Phoenix New Times. Dennis mastered his skills in the kitchen and has exceptional knowledge of the restaurant business. He also honed his talent working for some of the Valley's finest dining venues including The Estate House and Franco’s Trattoria.
Dennis is also an accomplished pastry chef. He trained with the award winning Pastry Chef Linda Marcinko while working for Linda’s Gourmet Cakes. The European influence of her kitchen exposed Dennis to the art of baking delicious cakes, pastries, breads and other specialty baked goods.
A graduate of The Art Institute of Phoenix, School of Culinary Arts, Dennis has brought a unique blend of experience and expertise to Bruce Brown Catering. Our clients consistently rave about his amazing American and European inspired dishes.
Executive Pastry Chef - John Kottmann
John was born in Michigan to Swiss parents. He comes from a long line of bakers that thrived in the old world; mainly in Zurich, Switzerland. His father opened the famous “Bits of Swiss” in Michigan offering fabulous European breads, cakes, tarts and pastries made in the true European tradition where beauty meets taste.
John grew up in his parent’s bakery where he spent most of his time learning from the best and perfecting the trade his family cherished. When he was old enough to live on his own, John left Michigan for sunny California and worked at “Paris Pastries” lending his talents to the well-known Los Angeles eatery. Several years later John moved to the Valley where he worked for 12 years as the Executive Pastry Chef at Chaparral Suites. After Chaparral Suites, John went to work for Strictly from Scratch’s Corner Shop Bakery.
John has known Bruce Brown for several years and decided to join Bruce Brown Catering in 2008. His inspiring creations continue to exceed the expectations of our client’s and make their special occasions memorable.
